I have to confess morel growing kit that the delicious creamy shiitake stroganoff is one of the recipes. My favorite “cooked food” of all time. So I decided to experiment today with the raw version. And how is it? Suffice it to say that I just licked a clean plate, yes really!

Here’s the recipe we created this evening for Raw Food Mushroom Stroganoff:

Time:

This can occur during the morel growing kit dehydration period of ~15 minutes for slicing and preparation ~ 2-3 hours in a warm dehydrator.

Raw material:
Sauce

1/2 cup cashews, soaked in water for 2 hours, and washed
1 tbsp lemon juice
1 tbsp tamarind
Place a large teaspoon of dark miso paste.
1/2 cup water
1 teaspoon dried zatar seasoning powder or 1 teaspoon fresh thyme leaves and sesame seeds
1 teaspoon paprika powder
a little sea salt

The rest!

1 large portobello-style mushroom
5 or 6 chestnut mushrooms
2 spring onions (green onions)
1 small clove garlic

Served with:

4-5 cabbage leaves
1 tablespoon olive oil
Sprinkle your favorite bean sprouts.

Optional: a handful of coriander leaves

Method

Cut the portobello mushrooms into bite-sized pieces. Finely chop the chestnut mushrooms.
To make the mushroom marinade: Mix in water, Qatar (or equivalent), miso tamari, paprika, salt, and crushed garlic.
Put the mushrooms in a dish and mix with the marinade. Leave it for a few hours – this will help the mushrooms absorb the flavor and soften it. So they tasted “cooked”! If you like “warm” food (like me!), marinate for 2 hours in the dehydrator – set at 105 F, or about 41C.
while the mushrooms are marinating You can soak the cashews for an hour or 2. Drain and rinse thoroughly.
While your cashews/mushrooms are doing this, shred the cabbage leaves finely and mix with olive oil. Sprinkle with your favorite sprouted seeds and leave to soften for a couple of hours. They will do it themselves. You don’t need to do anything, this is simple “cooking”!
Put the cashews in a high-speed blender with lemon juice. You may need to add 3 or 4 tablespoons of water to make a smooth puree.
when ready to eat Mix the cashew/lime chili paste into the mushrooms. Garnish with chopped coriander leaves if you have them around. Add ground black pepper as desired.
Served with shredded cabbage leaves
I just ate this recipe this evening. and we both lick the plate really clean We eat scraps of food that we eat. If cooked with stroganoff with piled rice But we feel full, nourished, and light – bright!

Optional: You can add several strips of red pepper to the mushroom mixture. before marinating for 2 hours to add even more intense flavor
